An Excuse - Times 3!

So I've been gone for quite some time now, and I apologize! But I have a good reason - in fact, I have three!! I am expecting triplets in late August! Joe and I are so, so excited and ready to be parents to our beautiful little babies. Needless to say, I've sort of been preoccupied with things other than my food blog. A combination of not having the energy or desire to cook, having had surgery I needed to recover from, and the development of an aversion to chicken breasts (what used to be our main protein) have led Joe and I to live off of takeout (hello, Wendy's) and meals prepared by my wonderful mother-in-law.

Of course, a perk of being pregnant with triplets is that you need to gain a lot of weight and eat a lot of calories daily. Therefore, I have become a close personal friend of Cold Stone Creamery, Carvel, the Chinese delivery guy... Or I should say Joe has become a close personal friend as he is the one who keeps me stocked with treats :)

I do have a few new recipes ready to blog and I hope to get to that soon. In the meantime, if anyone has super fast and easy recipes that are simple enough for a husband to prepare (and 0that don't involve whole chicken breasts) please send them my way! I also accept donations for my daily ice cream habit....

Simple recipes from this (bad) cook:

1) Potage: 4 leeks, 2 potatoes, boiled in water, squashed/pureed, and salted, peppered. A classic.

2) Lentils with mustard: cook lentils in water over medium heat until done. Add mustard/salt/pepper. Maybe add a boiled sausage, maybe not.

3) Beans, cheese, and avocado: chop and saute a vegetable (corn, red pepper, broccoli, onion, whatever). Add a can of beans (black/pinto/red/whatever). Meanwhile, in serving bowl, chop up an avocado and add goat/feta/whatever cheese to taste. Combine everything and mix it together. Maybe add some rice/salsa/whatever else you've got in the fridge.

4) Dried fruit "truffles": take whatever dried fruit you have (apricots, raisins, peaches, etc.). Put some in food processor, along with a handful of nuts (pecans, almonds, walnuts). Grind up for awhile. Add some honey. Grind some more until the stuff clumps together. Form into truffles.

Congrats again! You look terrific for carrying three! Enjoy the mandatory eating! Maybe your husband cook cook a few things on Sunday and then you will have meals for the week or to freeze, like meatloaf, lasagna rolls, enchiladas. You might also check out Everyday Food. Triplets--wow! Good luck with everything! For easy meals, I suggest soups--there's lots of variety and mostly just toss everything in together!

Wow! Congratulations!!!! I bet you are busy. One of my fellow pediatric interns for next year is expecting triplets, too...well, his wife is! They are due in June but I think are expecting to have them early May. So exciting. Hope everything goes well!

For easy dishes...stir fries are always good and you can use any meat/protein you want!

Congrats! I have been casually reading your blog for a few months. I just stumbled upon it one day and really enjoy your recipes.

A friend of mine just had triplets recently and they are now doing really great. Each baby was over 4 lbs. at birth, which they were thrilled with. Best of luck with your pregnancy.
